The Varsity Club Restaurant is back.

Originally known as the Spa Tavern, The Varsity Club is so much more than a restaurant. We are a vertically integrated food system that has its own 33 acre farm, creating a true farm to table experience.

The Farm provides produce, heirloom tomatoes, honey, infused maple syrups, morel and other wild mushrooms. The Farm also has its own orchard that provides apples, cherries, and pears; as well as a berry patch that provides raspberries, blueberries and black raspberries. Whenever possible, The Varsity Club sources local food products from local food producers. Many of the Farm’s products will be available at The Varsity Club for retail purchases.

New for 2022! The Varsity Club is also expanding this year to include an entertainment deck and BBQ deck with an outside bar.

The Varsity Club is not a member-based club, we’re open to the public and everyone is welcome! Please join us as we bring a unique dining experience to Merrimac.
